Makers' own statements. Where a maker gives two numbers, use the lower one until the maker confirms.
Glass lids and plastic or phenolic knobs tolerate less heat than metal. HexClad's pans are stated to at least 500°F but its glass lids to 400°F1. For a bread loaf at 450°F with the lid on, that lid is the problem, not the pan.
If a recipe needs a covered pot above the lid's limit, use a metal lid or foil, or check the maker's FAQ: Le Creuset's product page includes a question on whether the knob is oven-safe3.
HexClad says its ceramic nonstick is free from PTFE and forever chemicals; Caraway says its coating is made without PTFE, PFOA and PFAS; Lodge says its cookware is made without PFAS124. These are the makers' statements; we have not tested them.
Since January 1, 2025, Minnesota law has prohibited selling cookware that contains intentionally added PFAS in the state, defining cookware broadly (pots, pans, skillets, baking sheets, utensils and more)5. Other states have their own rules; check your state.
