One fridge magnet answers the question for any pan you already own. For new cookware, here is what the makers state.

The magnet test

Induction cooktops heat the pan itself through magnetism, so the pan must be magnetic. ENERGY STAR's advice: if you are unsure what your cookware is made of, hold a refrigerator magnet to the bottom. If it sticks, the pan will work with induction1.

Many pans you already own may qualify: ENERGY STAR names cast iron, stainless steel and enameled cast iron1. Pans that are entirely aluminum, copper or glass usually fail the magnet test unless the maker has added a magnetic base; the magnet tells you either way.

Why bother: ENERGY STAR says about 85% of the heating energy reaches what is in the pan with induction, against about a third with gas1.

Induction questions

My magnet sticks only weakly. Will it work?

A weak pull often means a thin magnetic layer. It may heat more slowly or unevenly; try it on the smallest suitable burner.

Do I need to replace my pans when I switch to induction?

Only the ones that fail the magnet test. Cast iron, enameled cast iron and most stainless steel usually pass1.
